All this advice is really good. I just did my sons 67 mustang after I saw a video from West coast cougar on the proceedure. It was easier than I expected and the alignment was perfect . I used a long level to get the body panels straight with the doors once I put them on. I also used the shims as mentioned earlier.
I personally would never send this out to someone else as they may not be as careful as you would be.
I used a bench vice and a map gas torch to slightly heat the hinge to get the pins out. Worked great.
Also, if you take a razer blade and carefully cut along the crease of the hinge before you remove it you will not damage or break the painted surfaces with that horrible peeling effect.

I own a 70 Mach 1 and I worked as a Ford mechanic at the local Ford dealer for 11 years. You can remove the wiring, door side hinge bolts, and then the doors. Once the doors are removed, the hinge to body bolts are fairly easy to reach. The problem is installing the new hinges and getting proper alignment before you tighten any bolts. At the dealership, we would remove the door, then we took a piece of 1/4" flat steel and clamped it to both hinges on the door side. We would mark the hinge position on the metal piece and remove the piece once it was marked properly. We would then drill the metal piece where the hinge bolts were marked. Once all the drilling was finished, we reinstalled the metal piece to the both hinges with bolts. Before removing the hinge to body bolts, we would mark the position of these hinges to the body. Use a marker, tape and even take measurements from the metal piece back to the door jamb. Now you can remove the hinge to body bolts. Reinstall the new hinges in the opposite manor. This works fairly well and gets the door very close. The dealership had shims that could be installed on the door side of the hinge. The shims could be used to do a final adjustment for the door latch alignment. It is still a two or three man operation, but I think this way was better than removing the fenders.
