Sounds like a great way to blow away a good part of 5000.00 :)
I have a 1969 Mach 1, which needs restored. It would be close, but I would want a shaker hood and scoop, tach dash and a fold-down rear seat.

For Christmas this year my wife and mother-in-law combined to allow me to purchase 1.5k of parts for the 1973 Mach 1 in my garage. I can honestly say that I have now completed the inventory for the full restoration of the interior plus some much needed engine parts. With thanks to Ponypastor the interior will now be completed this spring.
5k more will allow me to get the exterior painted and the new tires for the car.

I just spent $4800 straightening the chassis of our '73 after crashing out in Targa Tasmania, on day 1 of a 6 day tarmac rally. We are also about to spend $3000 on heads, $3000+ on crank, rods and pistons, $2000 on bits and bobs for the grill ... aaarrrggghhh.
If i was given $5000 to spend on my Mustang, I think I would have to go to a Casino to try to make it $20,000!

Yes, I would spend it on my Mach 1!
5 speed tranny install, motor updates and new rubber. Should just about cancel the budget.

I would start with rebuilding the front suspension and steering then see what I had left.

If I was given 5000.00, I might be able to find the rattle in the suspension that I have been hunting for 3 years now
I'd just stop looking and replace everything in the front end and rear end that I could unbolt!
