Are you looking for a car you can drive often and cruise down the freeway or one to drive around town once in a while?  If it's to drive often and cruise down the freeway you should probably stay with what you have.  You obviously put a T5 in your current Mach 1 so you can cruise down the freeway.  You definitely won't be able to do that with the other car.  An auto trans and 3.91 rear axle gears does not make a good highway cruiser.  If you want a car to drive around town once in a while, then the 428 SCJ car would be okay for that.

I know a lot of people are not fond of the FMX transmissions.  But those things were rock solid and could take a beating in stock form.  Most don't like their heavy cast iron case.  But they can handle a lot more torque than the T5.  I see you mentioned your T5 was custom built.  In stock form the T5 won't hold up to a 351W if you do much "spirited driving".

Yeah - having both cars is not an option. The FMX Trans is a solid Trans but has that heavy cast iron case which I didn’t like. So far what I’m hearing from you guys is the SCJ car would be a good investment and good car to own but to protect my investment it should only be driven once in awhile not too often to keep the mileage low and to protect the investment plus with a 3.91 diff and a 3 spd C6 the engine would be revving pretty high. My own Mach with its built 351w and T5 is a blast to drive - and I forgot to mention I have a Paxton NOVI 1200 SC on it with 7lbs of boost

Yeah, if you want a car that you can drive often and also cruise down the freeway in it, the 428 SCJ car is not an ideal choice.  And making any changes to a 428 SCJ car in an attempt to make it a better driver will only diminish it's value.

I guess I’m wondering from an investment stand point if I were able to swing it if I bought it for say 60k would it be worth 70k in 10—15yrs? I kinda look at it like an RRSP / 401 only with better return hopefully cause Im not getting much from those

That's a tough one.  I don't think it will appreciate in value that much in 10 years.  I've never looked at my Mach 1 as something I would make money from.  I mostly enjoy building them and tinkering on them.  In my mind I think most people break even plus or minus a little when they resell a classic car.  Unless the seller is basically a crook.

I have a theory that the value of the muscle cars from the 60/70's will begin to slowly decline as the people who grew up with these cars continue to age or have passed on.  It is simple supply and demand.  The supply will be there but the demand won't.  Although there may be some exceptions but most millennials are simply not interested in these cars just as I am not interested so much in the cars of 1930's,40's and 50's.  Yeah there cool to look at but I wouldn't invest in one.   I just think as my generation (I am currently 52) get closer to retirement we will be thinking more about our savings accounts than muscle cars.

I tend to agree with everything Mustangmike stated.  Something tells me Mustangmike's accountant mindset is correct on this one.  At 53 years old the only car or truck I like that is older than late 60's and early 70's muscle cars is the 1956 Ford F100 pick-up.  But maybe that is partly because I had one when I was younger, I don't know.  When I was a teenager cars from the 50's were still desirable to us.

Yeah Mustang Mike, has got it right. I believe the collector car hobby, will be left to us die hard people, who grew up with them. So as we go away, so will the want / demand for muscle cars. Those who paid stupid prices for them, will soon see the bottom fall out. I can tell you that from first hand knowledge, as I had a lot of friends, that were 10 to 20 years older then me, and they were restoring Model T's, and Model A's  plus all the big Dusenberg's, Packard's, Cord's, and Lincoln's. Now they have a very small following, and the prices have gone way south of what they were. The only ones giving anything for them, are in their 80's. Case in point. The 57  Thunderbird, was at one time the highest selling "Old Car" (before the muscle cars) Now they struggle hard to get out of the low 20's when 40 to 50 thousand, was the norm. I kinda wanted one, but I'm about 10 years older then you guys, and can actually remember them driving on the streets, as daily drivers. The tides changing and Mike put his finger on the pulse.

Point being, my father in law who passed away at 80 years old in 2005 left the behind a beautiful fully restored 1931 model A with a rumble seat. Man he loved that car and always despised the guys who chopped the roofs and made hot rods out them.  With that said the car still has its full roof and stock wheels.

The car is still in the family and has been sitting in my mother in laws garage since 2005.  I don't talk about it much and driven it maybe 2 or 3 times.  There is just no appeal to me.  Think about the history of this car.  The cars goes all the way back to Henry "the man" Ford.  The start of mass production and interchangeable parts.  So much history but the family would be lucky to get $10k for the car on a good day.  The guys who appreciated these cars and saw their value (the greatest generation) are becoming fewer and fewer.  My father in law would be 93 today and I am sure he wouldn't be in the market to buy another one.
